Ingredients

1 large egg
3/4 cup sour cream
8 tablespoons unsalted butter , softened
1 tablespoon fresh chives , chopped
1 teaspoon kosher salt
2 cups flour , plus more for rolling dough
2 lbs russet potatoes , peeled cut into large chunks
kosher salt & freshly ground black pepper , to taste
1 cup hot heavy cream
8 tablespoons cold butter , cubed
1 tablespoon olive oil
1 lb bacon , chopped
2 large yellow onions , thinly sliced
1 1/2 cups gruyere cheese , shredded
1 1/2 cups farmer 's cheese , shredded

Inspired by classic Polish dish, Michael Symon's Pierogi Lasagna is a hearty meal that is perfect for family dinner. The crushed pierogi dough forms a classic pasta sheet that is layered with mashed potatoes, bacon-onion mixture and two types of cheese. Essentially, It is a classic lasagna made amazing with the incorporation of pierogi, a delicious Polish dumpling. It is an easy dish to prepare, and can be served as a main course for a dinner party with salad, bread and some nice red wine. It's a comfort food that is sure to remind you of home.

Instructions

1.Make the dough for pierogis by whisking together egg, sour cream, butter, chives and 1 teaspoon salt in a mixing bowl.
2.Add flour and mix until the mixture becomes a smooth dough.
3.Roll out the dough on a floured surface and cut them into 3-inch circles.
4.Boil the potatoes in salted water until they're soft and then mash them with hot cream, cold cubed butter, salt and pepper to taste.
5.In a pan, fry bacon until it's crisp and add sliced onion to the same pan and cook till it turns translucent.
6.Grease cast iron skillet with olive oil and layer the bottom with pierogi circles.
7.Add a layer of potato mixture, bacon-onion mixture and shredded cheese on top of pierogi circles alternatively making sure that the last layer is the shredded cheese.
8.Bake it at 400 degrees F for 15-20 minutes and then broil for an additional 2-3 minutes until the cheese becomes browned on top.
9.Serve hot with garnish of finely chopped chives and a dollop of sour cream. Serves about 8-10 people.
