2 2 cups dried kidney beans or 2 cups dried black beans
1 onion , peeled and finely chopped
2 garlic cloves
4 tablespoons olive oil
1 pinch salt

Instructions

1.In a large pot, soak your choice of beans overnight in 6 cups of water.
2.After soaking, drain the beans and rinse with cold water.
3.In the same pot, add 6 cups of water and the beans. Bring to a boil, then reduce to a simmer and cook until beans are tender, about 1-2 hours.
4.In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add finely chopped onions and cook until softened, for about 5 minutes. Add minced garlic and sauté for another 1-2 minutes.
5.Add cooked beans to the skillet with onions and garlic and add a pinch of salt. Mash the beans with a potato masher or fork until they reach a desired consistency. Continue to cook for about 5-10 minutes, stirring occasionally.
6.Refried beans are ready to be served as a side dish or filling for burritos, tacos, and more.
