Ingredients

2 cups raw cranberries , coarsely chopped
1/2 cup sugar
3 1/2 cups all-purpose flour
1 1/2 cups sugar
1 tablespoon baking powder

1/4 cup oil ( crisco or veggie )
1 tablespoon grated orange rind
2 cups miniature semisweet chocolate chips
1 cup chopped nuts ( optional )

Instructions

1.Preheat oven to 375 degrees F. Grease twelve 1 pint straight sided regular mouth jars, bottoms only.
2.Mix chopped cranberries with the 1/2 Cup sugar. Divide sugared cranberries evenly among the jars and pack lightly.
3.In a large mixing bowl, sift together the flour, 1 1/2 cups sugar, baking powder, baking soda, salt.
4.Beat the eggs and orange juice until well blended; Blend in oil and orange rind. Add liquid mixture to the flour mixture all at once and stir well. Stir in the semisweet chocolate chips.
5.Spoon batter evenly over cranberries in jars, filling each about 2/3 full. Sprinkle with chopped nuts if desired.
6.Wipe rim of jar clean, place lid on and screw the jar band until fingertip tight. Place filled jars in a shallow baking pan spaced well apart.
7.Bake in the oven at 375 degrees F about 35-40 minutes until a toothpick inserted into the center comes out clean. Remove jars and place on a wire rack to cool.
