Instructions

1.In a small saucepan, whisk together the egg yolks, orange juice, lemon juice, orange zest, salt, and dry mustard.

3.Remove the saucepan from heat and whisk in the remaining 1/4 cup of butter until smooth.

6.Add the minced garlic and sauté for an additional minute.
7.Add the diced lobster meat to the pan and sauté until cooked through, about 3-4 minutes.
8.Add the chopped spinach and white wine to the pan and sauté until the spinach has wilted and the wine has reduced, about 2 minutes.
9.Season the mixture with salt and freshly ground black pepper.
10.Toast the English muffins and poach the eggs to your desired level of doneness.
11.To assemble, place 2 toasted English muffin halves on each plate.
12.Top each English muffin with a portion of the lobster and spinach mixture.
13.Place a poached egg on top of each muffin half.
14.Spoon hollandaise sauce over the poached eggs and sprinkle with minced chives.
