1 tablespoon unsalted butter ( room temperature )
1 tablespoon sugar , plus
1 cup breadcrumbs
3 tablespoons breadcrumbs
16 ounces cream cheese ( Philly please , cubed and room temperature )
2 large eggs
2 tablespoons matzo meal
1 tablespoon lemon juice
2 1/2 teaspoons lemon zest
2 teaspoons vanilla extract
1/8 teaspoon kosher salt

Instructions

1.Preheat oven to 350°F. Grease a 9-inch springform pan with butter, and dust with 1 tablespoon sugar and 3 tablespoons breadcrumbs.

3.Add eggs and process until just blended. Mix in 1 tablespoon sugar, matzo meal, lemon juice, lemon zest, vanilla extract, and kosher salt.
4.Pour batter into the prepared pan, and smooth the top. Bake in the preheated oven for about 1 hour until the cake is golden brown.
5.Turn off the oven and let the cheesecake cool for about 30 minutes before taking it out. Remove the cheesecake from the oven and run a knife around the edge of the pan to loosen any areas that may have stuck.
