4 lamb shanks

3 cups chicken broth , or more as needed
1 cup red wine , or more as needed
1 butternut squash , peeled and chopped

Instructions

1.Preheat oven to 350°F (175°C).
2.In a large oven-proof pot, melt 2 tbsp of butter with olive oil over medium heat.
3.Season lamb shanks with salt and freshly ground black pepper.
4.Add them to the pot and brown on all sides, then remove from the pot and set aside.
5.In the same pot, add 2 tbsp of butter and sauté onion, carrots, and celery for about 5 minutes, or until the vegetables are soft.
6.Add garlic, 1 tsp thyme, 1 tsp rosemary, 1 tsp basil, and cook for another minute.
7.Pour in chicken broth and red wine, and add lamb shanks back to the pot.
8.Bring the mixture to a simmer, then cover the pot and place in the preheated oven for 2 1/2 hours.
9.While the lamb is cooking, boil the chopped butternut squash in salted water until it's soft and tender.
10.Drain the butternut squash and purée it in a blender until it's smooth.
11.Season the butternut squash puree with salt, pepper, and the remaining butter.
12.Serve the lamb shanks with the butternut squash puree.
