3 cups all-purpose flour , divided
1 teaspoon salt
Anadama bread is a classic New England food that has been enjoyed by generations. The bread gets its unique name from a traditional story about a Massachusetts fisherman named Anadama who was so frustrated with his work that he went home and combined cornmeal, molasses, and flour to make a new type of bread. Instructions

1.Preheat the oven to 375°F.
2.In a small saucepan, bring the 1/2 cup of water to a boil. Gradually whisk in the cornmeal, stirring constantly until it thickens. Remove from heat and add in the butter and molasses. Stir until the butter has melted, then set aside to cool.
3.In a large bowl, mix the yeast with the warm water until dissolved. Add in 2 cups of flour, salt, and the cooled cornmeal mixture. Knead the dough on a floured surface for about 10 minutes, incorporating additional flour as needed to prevent sticking. The dough should be smooth and elastic.
4.Grease a large bowl with cooking spray and place the dough in it. Cover with a damp cloth and let rise in a warm, draft-free place for about an hour, or until it has doubled in size.
5.Grease a 9x5 inch bread pan with cooking spray. Punch down the dough and shape it into a loaf that will fit the pan. Place it in the pan and smooth out the top.
6.Cover the loaf with a damp cloth and let it rise again in a warm, draft-free place for another 30 minutes.
7.Bake the bread for 30-40 minutes, or until a toothpick comes out clean when inserted into the center. Remove from the oven and let it cool for about 5 minutes in the pan before transferring it to a wire rack to cool completely.
