Ingredients

10 lbs ripe tomatoes
2 cups white vinegar
3 cups finely chopped celery
2 -3 apples , sliced apples or 2 -3 chopped apples
1 tablespoon coarse salt ( pickling salt )
1 tablespoon whole mixed pickling spice
3 cups apple cider vinegar
2 cinnamon sticks
3 lbs granulated sugar
1 teaspoon cayenne pepper
Canadian fresh tomato butter is a delicious and easy condiment that celebrates the abundance of the harvest season. This recipe is a twist on traditional tomato jam recipes: instead of adding pectin, this recipe uses fresh apples for a natural thickening agent. Instructions

1.Blanch the tomatoes and remove the skin. Then, chop the flesh into small pieces.
2.In a large pot, add chopped tomatoes, white vinegar, celery, apples, pickling salt, mixed pickling spice, apple cider vinegar, cinnamon sticks, and cayenne pepper.
3.Cook the ingredients over medium heat, stirring occasionally, until the mixture thickens and the liquid has mostly evaporated.
4.Add sugar to the pot and continue to cook, stirring occasionally, until the mixture reaches a jam-like consistency.
5.Remove cinnamon sticks and carefully transfer the mixture to a blender. Blend until the mixture turns into a smooth puree.
6.Pour the puree into prepared sterilized jars. Store the jars in the refrigerator or preserve them in a water bath canner following the manufacturer’s instructions.
