Ingredients

30 ml butter
3 large leeks , white portion chopped
5 potatoes , peeled & chopped
1 large cooking onion , chopped
250 ml white wine ( fruity Chardonnay recommended )
250 ml hummus
1000 1000 ml chicken broth or 1000 ml turkey broth

Potato leek hummus soup is a twist on the classic potato leek soup. The addition of hummus lends creaminess and a depth of flavor to this hearty and filling soup. Instructions

1.Melt butter in a large pot.
2.Add leeks, potatoes, onions, and a pinch of pepper and stir well to combine.
3.Add white wine, and cook until the wine has evaporated.
4.Pour chicken or turkey broth over the vegetables.
5.Bring the mixture to a boil, then reduce heat to low and simmer for 20-30 minutes, or until the vegetables are very tender.
6.Remove from heat and let cool slightly.
7.Add hummus to the pot and puree the soup until it is smooth using an immersion blender or a regular blender in batches.
8.If the soup is too thick, add water or more broth to achieve the desired consistency.
9.Season with more pepper and serve hot, with bread if desired.
