Ingredients

Instructions

1.In a medium saucepan, bring the chicken stock to a boil over high heat.
2.Add brown rice and stir it well.
3.Cover the saucepan and reduce the heat to low.
4.Simmer until the liquid is absorbed, for about 50 minutes.
5.In a small bowl, whisk the cider vinegar, vegetable oil, honey, and pepper until smooth.
6.Add chopped pecans, sunflower seeds, pumpkin seeds, strawberries, green onions, basil, apricot and stir well to combine.
7.Serve on a lettuce leaf and garnish with whole fanned strawberry and basil leaves.
