Ingredients

2 beef tenderloin steaks ( fillet steaks , about 6 ounces each )
salt
freshly ground black pepper
1/2 teaspoon green peppercorn
1/2 teaspoon black peppercorns
1/2 teaspoon pink peppercorns
1/4 cup white wine
1/4 cup dry sherry
3 tablespoons sherry wine vinegar
1 shallot , chopped
2 cloves garlic , chopped
2 egg yolks
1/3 cup unsalted butter , melted
1 tablespoon olive oil
chopped flat leaf parsley ( , for garnish )

Instructions

1.Preheat oven to 400°F.
2.Season beef with salt and black pepper, to taste.
3.Heat a cast-iron skillet over high heat and add olive oil.
4.Add steaks to the skillet, sear for 3-4 minutes per side.
5.Transfer skillet to the preheated oven, and cook for an additional 4-5 minutes until desired doneness.
6.In a separate skillet, add in white wine, dry sherry, sherry wine vinegar, shallot and garlic. Cook until reduced to about 1/4 cup of liquid, around 5 minutes. Remove from heat.
7.In a mixing bowl, whisk egg yolks until blended.
8.Place mixing bowl on top of a saucepan containing 1 inch of boiling water(use low-medium heat) and whisk egg mixture, add reduced wine mixture and whisk continuously.
9.Slowly pour melted butter into the egg mixture, whisk constantly.
10.Add green, black and pink peppercorns, whisk until desired consistency.
11.Serve steaks with the hollandaise sauce and garnish with parsley.
