2 tablespoons instant cappuccino mix ( French vanilla )
1/2 cup dark brown sugar
3 tablespoons oil
10 fluid ounces apple butter
2 egg whites
1/2 cup butterscotch chips

Instructions

1.Preheat your oven to 425°F (220°C). Grease a muffin tin or line it with baking cups.
2.In a small bowl, mix the spelt flakes and warmed apple cider. Let sit for 5 minutes.
3.In a large bowl, sift together the rye flour, spelt flour, baking powder, sea salt, and pumpkin pie spice.
4.Add in the instant cappuccino mix, dark brown sugar, oil, apple butter, and egg whites and mix well.
5.Add in the butterscotch chips and soaked spelt flakes. Stir enough to combine all the ingredients.
6.Spoon the muffin mix into the prepared muffin cups.
7.Place the muffin tin into the oven and bake for 20 to 25 minutes. Check if a toothpick or skewer comes out clean before removing from the oven.
8.Take the muffin tin out of the oven and let the muffins cool for 5 minutes in it before removing them to a wire rack.
