Ingredients

1 cauliflower
2 onions
6 tablespoons oil ( or less )
1/2 teaspoon mustard seeds
1 teaspoon ground ginger
1 teaspoon salt
1/2 teaspoon turmeric
1/2 teaspoon cumin
2 tablespoons parsley , chopped
2 large tomatoes

Instructions

1.Cut the cauliflower into small florets and chop the onions.
2.Heat the oil in a large frying pan over medium heat.

5.Add the ground ginger, salt, turmeric, cumin and parsley to the pan and stir to combine.

8.While the cauliflower is cooking, chop the tomatoes and add them to the pan.
9.Sprinkle some sugar over the top of the cauliflower and stir well.
10.Cook the cauliflower for a further 5 minutes or until it is tender and cooked through.
11.Serve the spiced cauliflower hot or cold as a side dish or light meal.
