Instructions

1.Preheat oven to 375 degrees Fahrenheit and line a muffin tin with paper or silicone liners.
2.In a small bowl, mix Fiber One cereal and milk and let it sit for 5 minutes.
3.In a separate bowl, mix flour, ground flax seed, baking powder, cinnamon, and salt.
4.In another bowl, beat eggs and mix brown sugar, sugar, oil, vanilla extract. Add in ready Fiber One mix and mix well.
5.Add in shredded carrot, chopped apple, and unsweetened coconut to the egg-sugar mix.
6.Mix dry ingredients mix well with wet ingredients mix and blend until just combined.
7.Pour the batter into muffin cups (fill 2/3 full) and bake for 18-20 minutes until muffins are golden brown.
8.Let cool for 5 minutes and serve.
