4 ounces cream cheese , softened
2 tablespoons horseradish mustard
1 cup baby spinach leaves , stems removed , coarsely chopped
2 New York strip steaks , grilled to desired doneness ( about 8 oz . each )
4 tablespoons butter , softened
8 slices hearty white bread
4 slices havarti cheese
2/3 cup mushrooms , canned drained or 2/3 cup previously sauteed fresh mushrooms

Instructions

1.In a small bowl, mix cream cheese and horseradish mustard. Set aside.
2.Heat a grill pan over medium-high heat. Grill New York strip steaks and let rest for 5 minutes before slicing into thin strips.
3.In a large skillet, melt 1 tablespoon of butter over medium heat. Place 4 slices of bread in the skillet and top each with 1 slice of havarti cheese.
4.Divide the sliced steak strips between two bread slices and top each with 1/4 cup of mushrooms and 1/4 cup of chopped spinach.
5.Spread the cream cheese and horseradish mustard mixture evenly over each of the remaining 4 bread slices and place them on top of the steak and spinach-topped slices.
6.Melt 1 tablespoon of butter in the skillet over medium heat and add the sandwiches. Cook for 2-3 minutes on each side, or until the bread is golden brown and the cheese is melted and gooey.
