1 boneless double turkey breast , about 3-1/2 lb
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 cups chicken stock
2 tablespoons all-purpose flour
1/2 cup dry white wine
4 ounces pancetta , chopped
1 onion , chopped
2 garlic cloves , minced
1/2 bulb fennel , chopped
1/2 teaspoon dried thyme

1/4 teaspoon dried rosemary , crumbled
1/4 teaspoon fennel seed , crushed
1/2 cup roasted sweet red pepper , chopped
1/2 cup fresh bread , crumbs
2 tablespoons fresh parsley , chopped
2 tablespoons pine nuts , toasted

Instructions

1.Preheat the oven to 350°F.
2.Butterfly the turkey breast by cutting it horizontally without cutting all the way through. Open it and lay it flat.
3.In a skillet, heat oil over medium-high heat. Add pancetta, cook until browned. Add onion and garlic; cook for 3 minutes. Add fennel, thyme, rosemary, salt, pepper, and fennel seed; cook for 3 minutes. Remove from heat.
4.Add red pepper, breadcrumbs, parsley, and pine nuts. Mix well.
5.Lay the stuffing onto the turkey breast. Roll tightly and tie with kitchen twine. Season the turkey with salt and pepper.
6.Add chicken stock to the roasting pan and place the turkey on the rack of the roasting pan. Roast for around 1 hour 20 minutes or until an instant-read thermometer reaches 165°F.
7.Remove from oven and let sit for 5 minutes. Remove the kitchen twine and slice. Serve and enjoy!
