2 3/4 cups flour

1 lb bleached sultana raisins
1/4 lb citrus peel
1 slice green candied pineapple
1/2 lb candied red cherries

Mrs. Allingham's Light Fruitcake is a classic English fruitcake recipe passed down for generations. It's much lighter than traditional fruitcakes as it has fewer ingredients, no alcohol, and uses fruit sugar instead. Instructions

1.Soak the bleached sultanas, citrus peel, candied pineapple and candied cherries in lemon juice and brandy overnight in a covered container.
2.Preheat oven to 325°F. Grease and flour a 10-inch tube pan or a 12-cup bundt pan.
3.Sift the flour, baking powder and salt together.
4.In a separate bowl, cream the butter and fruit sugar together until light and fluffy.
5.Add eggs, one at a time, beating well after each addition.
6.Gradually add the dry sifted ingredients, mixing thoroughly.
7.Fold the soaked fruit mixture into the batter.
8.Pour the batter into the prepared pan. Smooth the top with a spatula and decorate with almonds if desired. Bake for 2-2 1/2 hours or until the cake springs back when lightly touched.
9.Remove the cake from oven and cool in the pan on a wire rack. When cool, fondly place in an airtight container.
