2 cups seedless raisins
2 cups boiling water
1/2 - 1 cup brown sugar
3 tablespoons all-purpose flour
1 tablespoon fresh lemon rind , grated
3 tablespoons fresh lemon juice or 3 tablespoons bottled lemon juice
1 pinch salt
1 pastry for a double-crust 9-inch pie
1 egg white , beaten

Instructions

1.Preheat the oven to 425°F.
2.In a medium saucepan, cook the raisins in boiling water for 5 minutes; drain and reserve 1 1/2 cups of the drained water.
3.In a small bowl, combine the brown sugar and flour. Stir in the lemon rind, lemon juice, salt, and reserved water. Stir well.
4.Cook over medium heat, stirring constantly until the mixture thickens and boils. Boil for 1 minute.
5.Set aside and let cool.
6.Roll out the pastry and use half to line a 9-inch pie plate. Trim the edges. Add the raisin filling. Make sure to spread it evenly.
7.Roll out the remaining dough and use it to cover the pie filling. Trim the edges and use a fork to press the top and bottom pastry edges together.
8.Brush the pie with beaten egg white and cut a few slits in the top crust to let the steam escape.
9.Bake for 30-35 minutes until golden brown and the filling is bubbly.
