1 teaspoon raw sugar
5 packets stevia
1 cup dried blueberries

Instructions

1.Preheat a non-stick pancake griddle to 350°F.
2.In a large mixing bowl, whisk together rice flour, millet flour, brown rice flour, sorghum flour, soy flour and tapioca starch.
3.Add in baking soda, cream of tartar, ground flax, maca powder, salt, nutmeg, guar gum, raw sugar and stevia. Mix until well combined.

5.Gradually add enough water while whisking until you get a smooth batter.
6.Using a 1/4 cup measure, scoop batter onto the pancake griddle and cook for about 2 minutes on each side or until bubbles form on the surface and the edges are firm.
7.Remove from heat and repeat with remaining batter.
