Ingredients

2 lemons
1/3 cup olive oil
1 teaspoon dried oregano
1 1/2 lbs beef marinating steak ( eye , round , or sirloin tip )
1 cup couscous
1 cup crumbled feta cheese
1 small tomatoes , seeded and diced
1/2 cup diced cucumber , seeded
1/2 cup sliced pitted black olives
1/3 cup diced red onion
3 tablespoons fresh parsley
2 tablespoons chopped of fresh mint
salt and pepper

Instructions

1.In a small bowl, whisk together the juice of 1 lemon, olive oil, and dried oregano. Season with salt and pepper.
2.Place steak in a large resealable plastic bag and pour marinade over top. Seal the bag and turn to coat. Marinate in fridge for at least 2 hours or overnight.
3.Preheat grill to high heat.
4.Remove steak from marinade and discard remaining marinade. Grill steak to desired doneness, about 4-5 minutes per side for medium-rare.
5.Let steak rest for 5 minutes before slicing.
6.While steak is resting, cook couscous according to package instructions. Once cooked, fluff with a fork and add crumbled feta cheese, diced tomato, diced cucumber, sliced black olives, diced red onion, fresh parsley, fresh mint, and the juice of 1 lemon. Season with salt and pepper to taste.
