3 1/2 cups diced rhubarb ( fresh or frozen )
1/2 cup golden raisin

1 tablespoon grated orange peel
1 1/2 cups sugar
1/3 cup orange juice
2 tablespoons quick-cooking tapioca
1 pastry for double-crust pie
2 tablespoons butter
1 tablespoon milk
baker 's sugar ( large crystals )

Instructions

1.Preheat oven to 400°F.
2.In a large mixing bowl, combine diced rhubarb, golden raisins, chopped pecans, grated orange peel, sugar, orange juice, and quick-cooking tapioca. Mix well.
3.Roll out the pastry and line a 9-inch pie dish with it. Spoon the rhubarb mixture into the pastry.
4.Dot the top of the rhubarb mixture with butter and cover with the pastry lid.
5.Brush the pastry lid with milk and sprinkle with baker's sugar.
6.Make a few slits in the top of the pastry lid to allow steam to escape.
7.Bake in the preheated oven for 15 minutes before turning the temperature down to 375°F. Cook for a further 35 minutes or until the pastry is golden brown.
8.Let the pie cool completely before serving.
