Ingredients

1 lb butter , no substitutes
2 cups white sugar
1/4 cup water
2 tablespoons corn syrup
1 1/3 cups toasted slivered almonds
4 ounces semisweet baking chocolate ( i.e. , 4 squares )
2/3 cup toasted slivered almonds , , finely chopped
4 ounces semisweet baking chocolate ( yes , again )

Instructions

1.In a large saucepan, combine the butter, sugar, water, and corn syrup over medium-high heat.
2.Stir constantly until the mixture reaches 290°F on a candy thermometer.
3.Remove the saucepan from the heat and stir in 1 1/3 cups of toasted slivered almonds.
4.Quickly pour the mixture onto a greased baking sheet and smooth it out to a thickness of 1/4 inch.
5.Let it cool for 10 minutes and then sprinkle 4 ounces of chopped semisweet baking chocolate over the top.
6.Wait a couple of minutes for the chocolate to melt and then use a spatula to spread it over the top of the toffee.
7.Sprinkle another 2/3 cup of toasted slivered almonds on top of the chocolate and let it cool completely.
8.Once cooled, break the Almond Roca into small pieces and serve.
