Ingredients

1 lb prawns , peeled and deveined , reserve the shells
1 head garlic , separated and peeled
4 dried hot chili peppers
1/2 teaspoon dried rosemary
1/2 teaspoon fennel seed
1/3 cup sherry wine
1 sweet red pepper , seeded , deribbed and cut into 1/4 '' strips
2 scallions , peeled and chopped
1 tablespoon butter
1 quart water

Instructions

1.Add the prawn shells, garlic, chili peppers, rosemary, fennel seed, sherry wine, sweet red pepper, scallions, butter, and water to a large pot.
2.Bring the mixture to a boil over high heat.
3.Reduce the heat to low and let the mixture simmer for 15 minutes.
4.Strain the mixture through a fine-mesh sieve into a separate bowl.
5.Return the strained liquid to the pot and bring it to a simmer once again.
6.Add the peeled and deveined prawns to the pot and let them cook for 3-4 minutes, or until they turn pink.
7.Remove the prawns from the pot and set them aside on a plate.
8.Strain the poaching liquid once again through a fine-mesh sieve and discard any solids.
9.Return the poaching liquid to the pot and bring it to a boil over high heat.
10.Cook the poaching liquid until it has reduced to about 1/2 cup.
11.Pour the reduced poaching liquid over the prawns and serve immediately.
