4 1/2 lbs russet potatoes
1 1/2 cups half-and-half ( half milk and half cream )
2 cups shredded Fontina cheese ( about 1/2 lb . )
3 tablespoons white truffle oil ( optional )
coarse salt & freshly ground black pepper
Mashed Potato Fonduta is a classic Italian dish that combines creamy mashed potatoes with melted Fontina cheese and truffle oil. Instructions

1.Preheat the oven to 375°F.
2.Peel the potatoes and cut them into cubes then boil them for 25-30 mins until tender. Drain.
3.Return the potatoes to the pot. Add half-and-half, Fontina cheese, truffle oil, 1 1/2 teaspoons of salt, and 3/4 teaspoon of pepper. Mash until smooth.
4.Transfer the mashed potato mixture to a 9x13-inch baking dish.
5.Bake until warmed through and golden brown on top for 30-35 mins.
