Broke Guy's Chicken and Dumplings is an old-school recipe that has been passed down in many American households for generations. Instructions

1.Preheat the oven to 350°F. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.

4.Add 3 cups of water to the pot and bring to a boil. Return the chicken thighs (skin-side up) to the pot, cover with a lid, and transfer to the oven. Bake for 1 hour.
5.In a large bowl, whisk together remaining 2 cups of flour, baking powder, baking soda, and 1 tsp of salt. Add melted butter and buttermilk, and stir until a dough forms.
6.Remove the pot from the oven and drop the dough by tablespoonfuls into the broth. Cover the pot and simmer for an additional 20 minutes, or until the dumplings are cooked through.
