Ingredients

1 1/2 cups flour

1 1/2 cups oatmeal ( regular )
1 lb dates ( pitted chopped )
1 cup water
4 tablespoons sugar
1 orange ( rind grated )
4 tablespoons orange juice
2 teaspoons lemon juice
Auntie Anne's Matrimonial Cake is a classic Canadian dessert that has been a family favorite for generations. It is a layered cake made with date filling sandwiched between two layers of a cake-biscuit hybrid, topped with oatmeal crumbles. Instructions

1.Preheat oven to 350°F (180°C) and grease a baking sheet.
2.Sift together flour, baking soda, baking powder, and salt.
3.In a large mixing bowl, cream butter until soft.
4.Add in sugar and beat well for 5 minutes.
5.Add in oatmeal and mix well.
6.Add the sifted dry ingredients along with the oatmeal mixture and mix well.
7.In a separate pan, cook dates, water, sugar, orange rind and juice for 2 minutes. Let it cool.
8.Add in lemon juice and mix thoroughly.
9.Take a quarter of the cake mixture and set it aside.
10.Spread the remaining cake mixture into the prepared dish.
11.Pour cooled date filling over cake mixture.
12.Roll out the remaining quarter of the cake mixture to fit the pan and place it on top of the filling.
13.Bake in the preheated oven for 35-40 minutes or until golden brown.
