Ingredients

4 chicken breasts , cut into cubes
1/2 cup flour
1/2 teaspoon herb seasoning mix , seasoning of choice ( thyme , basil , oregano , etc . add to flour AND bread crumbs )
1/2 teaspoon paprika and cayenne ( add to flour AND bread crumbs )
1/2 teaspoon salt & pepper ( add to flour AND bread crumbs )
1 egg
1/4 cup milk
1/8 cup mustard
1 1/2 cups dried breadcrumbs
8 medium flour tortillas ( might say large on the package but look for 8 tortillas on package )
2 cups romaine lettuce
2 cups tomatoes
2 cups caesar salad dressing or 2 cups ranch salad dressing ( 1/2 cup per person )

Instructions

1.Preheat the oven to 400F/204 C
2.Line a baking sheet with parchment paper
3.Mix the flour, herb seasoning mix (of your choice), paprika, cayenne pepper, salt and pepper together in a small bowl
4.In a separate bowl, whisk the egg, milk and mustard until smooth
5.Put the breadcrumbs in a third bowl
6.Dip each chicken cube in the flour mixture, then egg mixture, and finally in the breadcrumbs to coat.
7.Put the coated chicken cubes on the prepared baking sheet
8.Bake in the preheated oven for 18-20 minutes, or until golden brown and crispy.
9.Heat the tortillas according to package instructions, then spread 2 tbsp of Caesar/Ranch dressing on each tortilla.
10.Place the lettuce and tomatoes on each tortilla, then add the chicken cubes
11.Roll up the tortillas tightly and serve immediately
