2 cups frozen mixed vegetables
1 package refrigerated hash brown potatoes , thawed
1 cup cheddar cheese , shredded
1/4 cup butter , melted

Instructions

1.Preheat the oven to 375F (190C).
2.In a large skillet, heat the olive oil over medium heat.
3.Add the chopped onion and cook until softened, about 5 minutes.
4.Add the ground beef and cook until browned, breaking up any large pieces with a wooden spoon.
5.Stir in the flour and cook for 1-2 minutes until well combined.
6.Add the ketchup or sriracha sauce, beef or vegetable broth, Worcestershire sauce, salt and pepper.
7.Stir well to combine.
8.Add the frozen mixed vegetables and cook until heated through.
9.Transfer the mixture to a 9x13 inch (23x33 cm) casserole dish.
10.Arrange the thawed hash brown potatoes over the top.
11.Drizzle the melted butter over the potatoes.
12.Sprinkle the shredded cheddar cheese over the top.
13.Cover the dish with foil and bake for 30 minutes.
14.Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly. Serve hot.
