Ingredients

1/2 cup unsalted butter
1 cup celery root ( celeriac ) , peeled and finely chopped
2 1/2 tablespoons chopped green bell pepper
3 tablespoons chopped red bell pepper
2 1/2 tablespoons chopped yellow bell pepper
1 pound peeled crawfish tails
2 teaspoons minced garlic
3 bay leaves
1 1/2 tablespoons all-purpose flour
1/2 cup low-sodium chicken broth
1/2 cup water
1 teaspoon coarse smoked salt flakes
1 pinch cayenne pepper , or to taste
3 tablespoons finely chopped fresh parsley
3 tablespoons green onions , chopped

Instructions

1.Melt the butter in a large skillet over medium heat.
2.Add the chopped celery root and bell peppers. Cook for 5 minutes or until vegetables are softened.
3.Add the crawfish tails and garlic to the skillet, stirring continuously for 2-3 minutes until the crawfish tails are cooked.
4.Sprinkle flour over the crawfish mixture and stir gently for 1-2 minutes until the flour is well combined.
5.Pour in the chicken broth and water and stir well. Add bay leaves and smoked salt flakes and bring to a boil.
6.Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
7.Remove the bay leaves and adjust seasoning with cayenne pepper.
8.Garnish with the parsley and green onions. Serve hot with steamed white rice.
