3 cartons low-fat vanilla yogurt
1/2 cup powdered sugar
3/4 cup thinly sliced ripe banana
1 cup sifted cake flour
1 teaspoon baking powder

3 eggs , separated
1 cup sugar , divided
2 teaspoons vanilla extract
1/4 cup water
2 egg whites
vegetable oil cooking spray
1/2 cup low sugar strawberry spread ( jam )
3/4 cup sliced ripe banana
1 teaspoon lemon juice
2 tablespoons chopped walnuts , toasted
1/2 ounce semisweet chocolate , melted

Instructions

1.In large bowl, combine yogurt and powdered sugar; stir in sliced bananas.
2.In small bowl, sift together flour, baking powder, and salt. In large bowl, beat egg yolks and 3/4 cup of the sugar until light and mixture falls back onto itself in ribbon-like pattern, about 5 minutes. Beat in vanilla extract.
3.Add flour mixture to egg yolks mixture in 3 parts, alternating with water in 2 parts; mix until just blended. In separate large bowl, beat egg whites until soft peaks form. Gradually add remaining 1/4 cup sugar; beat until stiff.
4.Fold beaten egg whites into batter until well blended. Grease 13-by-9-inch baking pan with cooking spray. Pour in batter.
5.Bake at 350° for 20 minutes. Turn cake out onto clean towel; cool.
6.Place inverted cake back into baking pan. Spread strawberry spread over top; top with sliced banana; brush bananas with lemon juice. Spread yogurt mixture evenly over top.
7.Sprinkle walnuts over top. Freeze until set. Drizzle with melted chocolate before serving. Serve chilled.
