Ingredients

1 lb bacon
1 vidalia onion , chopped
6 slices smoked provolone cheese
1/4 cup chives ( fresh , chopped )

Americanized Slovak Haluski is a tasty dish that originated in Central Europe. Instructions

1.In a large bowl, mix together the flour, baking powder, pureed potatoes, and beaten eggs until well combined.
2.Heat a large skillet over medium-high heat and fry the bacon until crispy. Remove the bacon from the skillet and set aside.
3.In the same skillet, saute the chopped onions until soft and fragrant.
4.Reduce heat to low, and in the same skillet, add the flour and potato mixture. Cook the haluski until it is lightly browned, stirring occasionally.
5.Break the bacon into bits, and mix into the skillet with the haluski.
6.Finally, place the slices of smoked provolone cheese on top of the haluski, and sprinkle the dish with chopped chives and salt and pepper to taste.
7.Serve and enjoy!
