Finnish Strawberry Cake, also known as Mansikkakääretorttu, is a popular dessert in Finland. It is typically made with fresh strawberries, whipped cream and a light sponge cake base. The cake is then rolled up into a log shape, similar to a Swiss roll, and chilled before serving. This recipe is a little different, as it uses a springform pan instead of a roll, but it still captures the essence of this classic dessert. The combination of sweetened sponge cake, fresh strawberries and whipped cream is irresistible, making this cake the perfect addition to any summer gathering or special occasion.

Instructions

1.Preheat oven to 350 degrees F. Line a 9-inch springform pan with parchment paper and grease the sides with butter.
2.In a medium sized bowl, beat the eggs and sugar together using an electric mixer until light and fluffy. Add in the vanilla extract and mix well.
3.In a separate bowl, sift together the flour, potato starch and baking powder.
4.Slowly and gently fold the dry ingredients into the egg mixture until just combined.
5.In a saucepan over medium heat, combine the milk and vanilla extract, stirring occasionally until heated through.
6.Slowly add the milk mixture to the batter and mix until it is smooth.
7.Pour half of the batter into the prepared pan and smooth out the surface with a spatula.
8.Arrange half of the sliced strawberries on top of the batter, leaving a little bit of room between the strawberries and the edge of the cake pan.
9.Top with the remaining batter and spread it out with a spatula.
10.Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
11.Let cool to room temperature and remove from the pan.
12.For the whipped cream topping, use an electric mixer to beat the heavy cream, sugar and vanilla extract on medium-high speed until stiff peaks form.
13.Spread half of the whipped cream on top of the cake and arrange the remaining sliced strawberries on top.
14.Top with the remaining whipped cream, spreading it out evenly.
15.Chill in the refrigerator for at least 2 hours before serving.

The fresh strawberries give it a refreshing taste and the whipped cream topping is airy and decadent.
This dessert is perfect for summer gatherings and special occasions.

CONS

This dessert is also high in calories and sugar, so it should be enjoyed in moderation as part of a balanced diet.

HEALTH & BENEFITS

Despite being a dessert, this Finnish Strawberry Cake does have some health benefits. Strawberries are packed with Vitamin C, which helps boost the immune system and promotes healthy skin.
They also contain antioxidants and anti-inflammatory properties which can help reduce the risk of chronic diseases. However, due to the high sugar content, it is still considered a treat and should be consumed in moderation.
