Finnish ribbon cakes are a traditional pastry that can be enjoyed throughout the year. They are often served during the Christmas season in Finland, but they are also perfect for enjoying as a breakfast pastry or afternoon snack. These delicious cakes have a soft and tender texture, and they are filled with a sweet and tangy raspberry jam that pairs perfectly with the buttery dough. They are typically made into a long ribbon shape, hence the name, and are cut into slices before serving.

Instructions

.Preheat oven to 375°F (190°C).
.In a large mixing bowl, cream the butter and sugar together until light and fluffy.
.Add the egg yolk, vanilla, and lemon peel. Mix well.
.In another bowl, whisk the flour and salt together and gradually add it to the butter mixture. Mix until just combined and forms a soft dough.
.Divide the dough into four equal pieces. On a floured surface, roll out each piece into a rectangle shape (about 10 x 7 inches).
.Spread the raspberry jam along the center of each rectangle lengthwise.
.Fold the dough over the jam on each side so that they meet in the middle. Press the edges together to seal them.
.Place them seam side down on a parchment-lined baking sheet and bake for 20-25 minutes.
.Allow to cool for 10 minutes before cutting into slices, about 1-inch wide.
.In a small bowl, whisk the confectioners' sugar and lemon juice (or water) together to form a glaze. Drizzle over the cooled ribbon cakes before serving.
