Ingredients

4 large potatoes
1 large onion
2 slices bacon ( optional )
oil
2 eggs
8 -12 ounces milk
salt
1 cup sheep cheese , grated , for topping
1 sprig thyme ( to garnish ) ( optional )
Aragonese Potatoes Au Gratin (Patatas Gratinadas De Aragon) is a traditional Spanish dish that is popular throughout Spain. Instructions

1.Preheat the oven to 200 degrees Celsius.

4.In a mixing bowl, mix the milk with the eggs, salt, and a pinch of thyme.

6.Pour the egg mixture over the potatoes and onions.
7.Sprinkle grated cheese on top and bake for 30-40 minutes or until golden brown on top.
8.Allow to cool for a few minutes and then serve with some bacon on top and a sprig of thyme for garnish (if desired).
