1/2 cup celery ( chopped )
1 white onion ( chopped )
4 garlic cloves
17 ounces petite diced tomatoes
1 teaspoon ground cumin
1/2 teaspoon oregano leaves
3 large knorr chicken bouillon cubes
5 cups water
1/2 teaspoon cinnamon

Instructions

1.Heat the olive oil in a large sauté pan over medium-high heat. Add the rice and barley and cook for 5 minutes or until lightly browned.
2.Add the chopped red, yellow, green, and orange bell peppers, green onions, celery, white onion, and garlic cloves to the pan. Sauté for 5 minutes or until the vegetables are slightly softened.
3.Add the petite diced tomatoes, ground cumin, oregano leaves, knorr chicken bouillon cubes, water, and cinnamon to the pan. Bring the mixture to a boil, then reduce the heat to low and cover the pan.
4.Simmer for 45 minutes or until the rice and barley are cooked through and the liquid has been absorbed.
5.Fluff with a fork before serving.
