Ingredients

6 tomatoes , ripe but firm
1 cup corn kernel , fresh ( or frozen and thawed )
1/2 fresh jalapeno pepper , minced
1/3 cup scallion , chopped
1/3 cup red pepper , minced
3 tablespoons fresh basil leaves , chopped ( or 1 tbls . dried )
2 tablespoons cilantro , chopped
4 ounces monterey jack cheese , shredded
1/2 teaspoon salt
black pepper , to taste
1 tablespoon yellow cornmeal
1 tablespoon unsalted butter

Instructions

1.Preheat oven to 375°F (190°C). Grease a 9-inch (23cm) pie dish.
2.Cut off the tops of the tomatoes and gently scoop out the pulp and seeds. Be sure to leave the shells intact and place them in the prepared dish. Set aside.
3.In a bowl, mix together the corn kernels, jalapeno pepper, scallion, red pepper, basil leaves, cilantro, monterey jack cheese, salt and black pepper.
4.Spoon the mixture into the tomato shells until each is about 3/4 full.
5.In a small bowl, mix together the cornmeal and unsalted butter. Sprinkle this mixture over the top of the filled tomatoes.
6.Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and the tomatoes are soft and tender.
