Ingredients

1/2 kg almonds
1/2 kg sugar ( may use 1/2 lb to 1 pound , desired )
1 lemon
1 cinnamon stick
1 pinch salt
2 1/2 liters water ( warm )
Horchata de Almendra, also known as Almond Horchata, is a sweet and nutty drink from Spain. This popular drink is made from ground almonds, sugar, cinnamon, and water, and is a favorite among locals and tourists alike. It is a refreshing beverage that is perfect to enjoy on a hot day, or as a sweet treat after a meal.

Instructions

1.Begin by soaking the almonds in warm water for 8-12 hours.
2.After the almonds have been soaked, drain and rinse them thoroughly.
3.In a blender or food processor, blend the almonds with 2 1/2 cups of the water until smooth.
4.Strain the mixture through a cheesecloth or fine mesh strainer into a large pitcher.
5.Add the sugar, lemon zest and juice, cinnamon stick, and salt to the pitcher and stir until the sugar has dissolved.
6.Gradually add in the remaining water, stirring until well combined.
7.Chill the horchata in the refrigerator for at least 1 hour before serving. Serve over ice and enjoy!
