Ingredients

250 g blanched almonds
4 slices white bread , crusts removed
2 garlic cloves , crushed
3 3/4 cups water
2 tablespoons sherry wine vinegar
2 tablespoons whole egg mayonnaise , good quality
24 almonds , skin on and roughly chopped
1 lebanese cucumber , peeled , deseeeded and finely chopped
8 white anchovies , rinsed and chopped
micro herbs , good pinch for each bowl
Ajo Blanco is a cold soup that is popular in Spain, particularly in the Andalusian region. Instructions

1.Preheat oven to 150°C. Spread almonds and bread over 2 large baking trays. Bake for 10-15 minutes or until almonds and bread are toasted and golden. Set aside to cool.
2.Reserve 12 almonds for garnish. Process remaining almonds and bread in a food processor until finely chopped. With the motor running, gradually add garlic, then water, vinegar and mayonnaise until mixture is smooth. Season.
3.Divide soup among serving bowls. Top with cucumber, anchovies, reserved almonds and micro herbs. Drizzle with olive oil. Season with black pepper and serve.
