2 lbs zucchini , diced small

Instructions

1.In a large skillet or pot, heat the olive oil over medium-high heat.
2.Add in the garlic and onions and sauté until the onions are soft and translucent, about 5 minutes.
3.Add the diced zucchini, salt, pepper, and oregano to the skillet and stir to combine. Reduce heat to medium and cover the skillet.
4.Allow the zucchini to cook for 20-25 minutes, stirring occasionally, until it is soft and tender.
5.If using, create 6 wells in the zucchini mixture and crack an egg into each. Cover the skillet and allow the eggs to cook for 5-7 minutes, or until they are cooked to your preference.
6.Serve hot, optionally garnishing with fresh herbs like parsley or cilantro. Enjoy!
