Ingredients

4 ripe but firm figs
1 teaspoon sherry wine vinegar
1 teaspoon pedro ximenez sweet sherry
fresh ground black pepper
4 slices rustic whole wheat bread , sliced 3/4 inch thick
2 -4 ounces aged goat cheese , softened at room temperature
1 tablespoon fresh basil leaf , slivered

Instructions

1.Cut off the stem end of figs and quarter them.
2.In a small bowl mix together sherry wine vinegar, pedro ximenez sweet sherry and black pepper.
3.Toss the figs with the sherry marinade and marinate for 30 minutes.
4.Toast the bread slices and cut each slice into 4 pieces.
5.Spread each toast with some softened goat cheese.
6.Top each toast with a fig quarter and sprinkle with slivered basil.
