Instructions

1.In a medium bowl beat together eggs, half-and-half or milk, salt, black pepper, and saffron.
2.In a 10-inch broiler-safe oven-going skillet heat olive oil and butter over medium heat. Add mushrooms and garlic; cook for 3 minutes or just until tender. Increase heat to medium-high. Add potatoes; cook, stirring frequently, for 5 to 7 minutes or until potatoes are golden. Pour egg mixture over potato mixture.
3.Reduce heat to low. Cook, covered, for 10 to 12 minutes or until the top of the omelet is almost set. Preheat broiler. Top omelet with chives or parsley. Broil 4 to 5 inches from the heat for 1 to 2 minutes or until the top is set and lightly browned.
