Ingredients

4 tomatoes
2 medium onions
3 garlic cloves
2 green peppers
1 red pepper
2 courgettes
2 tablespoons olive oil , add more if necessary
1 teaspoon sugar
salt , to taste

Instructions

1.Heat the olive oil in a large frying pan over a medium heat.
2.Slice the onion and garlic and add it to the pan.
3.Slice the green and red peppers and add them to the pan.
4.Cook the vegetables for about 7-8 minutes until they are soft.
5.Dice the tomatoes and courgettes and add them to the pan along with the teaspoon of sugar, salt and pepper to taste.
6.Cook for a further 15 to 20 minutes or until the mixture has thickened slightly.
7.Serve hot.
