Ingredients

20 g pressed yeast
4 tablespoons warm milk
1/2 kg flour
3 whole eggs
1 egg , separated
1 teaspoon salt
1 tablespoon dark rum
1 tablespoon orange flower water ( agua de azahar )
1 teaspoon grated orange rind
1 teaspoon grated lemon rind
100 g butter , softened
50 g blanched almonds , skinned and slivered
candied fruit ( about 100 grams ) or orange peel , etc . for decoration ( about 100 grams )
Roscón de Reyes is a traditional Spanish sweet bread served during the Epiphany celebrations in January, also called Three Kings' Day. Instructions

1.Dissolve the yeast in the warm milk and set aside.
2.In a large bowl, mix the flour, eggs, egg yolk, salt, dark rum, orange flower water, orange rind, lemon rind, and softened butter together.
3.Add the yeast mixture to the bowl and knead the dough until it is smooth and elastic.
4.Cover the bowl with a clean dish towel and let the dough rise in a warm place for about 2 hours or until it has doubled in size.
5.Preheat the oven to 375°F.
6.Punch down the dough and shape it into a circle, making a hole in the center with your finger to form the shape of a crown.
7.Place the circle onto a baking sheet lined with parchment paper and decorate the crown with slivered almonds and candied fruit as desired.
8.Brush the crown with the beaten egg white and bake it for 20-25 minutes or until golden brown.
9.Remove from the oven and let it cool before serving.
