Ingredients

1/4 cup olive oil ( plus 3 tablespoons )
4 chicken legs
4 chicken thighs
4 chicken drumsticks
salt
4 cups diced Spanish onions
1 cup diced green bell pepper
1 cup diced red bell pepper
2 tablespoons minced garlic
1 cup dry white wine
1 cup thinly sliced and diced serrano ham
1/2 teaspoon smoked paprika
2 cups plain canned tomato sauce
1 fresh rosemary sprig
1 bay leaf
2 cups water

Instructions

1.Season chicken with salt.
2.In a Dutch oven, heat 1/4 cup of olive oil over medium high heat.
3.When the oil is hot, add the chicken and cook until browned on all sides. Remove chicken from pot and set aside.
4.In the same pot, add 3 tablespoons of olive oil, onions, peppers, garlic, and serrano ham. Cook for 10 minutes, stirring occasionally.
5.Add smoked paprika and wine. Cook until the wine is reduced by half, or for about 10 minutes.
6.Return chicken to the pot and add tomato sauce, rosemary sprig, bay leaf, and water. Stir everything well.
7.Cover and simmer for 45 minutes. Uncover and cook for another 15 minutes to thicken the sauce.
8.Serve hot with rice or bread.
