Ingredients

4 thick slices white bread , crusts removed ( homemade style is better than wonder bread style )
2 tablespoons olive oil
1/2 cup olive oil
1 red onion , diced
2 garlic cloves , minced
2 red peppers , diced
3 1/2 ounces serrano ham , thinly sliced and cut into strips
2 spanish chorizo , diced
1/2 teaspoon smoked paprika ( Spanish , pimenton )
4 eggs
2 tablespoons fresh parsley , minced

Instructions
