Ingredients

2 cups day-old white bread , crusts removed
1 1/2 cups vegetable stock
1 cup cucumber , peeled and chopped ( I added a small amount of lemon cucumbers )
1 cup green seedless grape , washed
1/4 cup almond butter
1/4 cup slivered almonds ( I used whole and save the slivered almonds for garnish )
3 tablespoons extra virgin olive oil
2 tablespoons sherry wine vinegar
1 garlic clove , peeled and chopped
1/2 teaspoon kosher salt
sliced grapes , green and red
slivered almonds ( toasted or raw-your choice )
fresh herb ( flat leaf parsley , chives , cilantro , etc . )
extra virgin olive oil , for drizzling
sherry wine vinegar , for drizzling
cracked black pepper
White Gazpacho is a cold soup that originates from Spain and is typically made with bread, almonds, grapes, and garlic. The name 'gazpacho' comes from the Latin word 'caspa,' meaning 'fragment' or 'leftovers.' Traditionally, gazpacho was made by blending stale bread and leftover vegetables with oil and vinegar. This vegan version of gazpacho uses day-old white bread, green seedless grapes, cucumber, almond butter, and slivered almonds. It is seasoned with olive oil, sherry wine vinegar, garlic, and salt. Instructions

1.Break bread into small pieces and place in a bowl. Add vegetable stock and let soak for 5 minutes until bread is soft.
2.In a blender, combine soaked bread, cucumber, grapes, almond butter, slivered almonds, olive oil, sherry wine vinegar, garlic, and salt.
3.Puree mixture until smooth.
4.If the soup is too thick, add water to achieve the desired consistency.
5.Refrigerate the soup for at least 30 minutes before serving.
6.Garnish with sliced grapes, slivered almonds, fresh herbs, olive oil, sherry wine vinegar, and cracked black pepper. Serve chilled.
