1/2 teaspoon salt , plus salt to taste

32 ounces rib eye steaks
1/4 cup olive oil
2 cups yellow onions , chopped
1/2 cup canned plum tomatoes , diced
1 bay leaf
1/4 cup tawny port
3 tablespoons Italian parsley , chopped

Instructions

1.In a bowl, whisk together red wine vinegar, minced garlic, sweet paprika, salt, and pepper.
2.Rub mixture onto both sides of the rib eye steaks, cover and set aside in the fridge for 30 minutes.
3.In a skillet, heat olive oil over medium heat and sear steaks for 2-3 minutes per side until golden brown, then remove from skillet and set aside.
4.In the same skillet, cook chopped onions for 5-7 minutes until golden brown.
5.Add diced canned plum tomatoes, bay leaf, and tawny port to the skillet and cook for 2 minutes.
6.Return the steaks to the skillet and cook for an additional 2-3 minutes per side for medium-rare, or until desired level of doneness is reached.
7.Remove the bay leaf and transfer steaks and onion sauce to serving plates.
8.Garnish with chopped parsley and serve hot.
