Instructions

1.Preheat oven to 400°F (204°C).
2.Peel the garlic cloves and slice them thin.
3.Cut the peppers in half and remove the seeds and stems. Cut into thin strips.
4.Dice the tomatoes and potatoes into small pieces.
5.In a large bowl, mix garlic, red peppers, tomatoes, and potatoes. Add olive oil, salt, and pepper and stir well to coat.
6.Transfer to a baking dish and drizzle with vinegar and 1 tablespoon of oil.
7.Roast in the preheated oven for 45-50 minutes, stirring occasionally.
8.Add the chopped green onions, mix well, and roast for an additional 5 minutes.
9.Serve hot or cold.
