Ingredients

2 tablespoons butter , at room temperature
1/2 teaspoon pimentos , de la vera ( Spanish paprika )
8 slices sandwich-size Italian bread
8 thin slices serrano ham ( about 3 ounces ) or 8 prosciutto ( about 3 ounces )
4 ounces young mahon cheese , coarsely grated ( you also can use fontina or American Muenster )
4 ounces manchego cheese , coarsely grated
4 fresh piquillo chilies , stems removed , slit lengthwise and opened like a book ( can sub canned )

Instructions

1.In a small bowl, mix together the butter and pimentos until well combined.

3.On the unbuttered side of four slices of bread, place a slice of Serrano ham.
4.Divide the mahon cheese evenly among the four sandwiches, and sprinkle it on top of the ham.
5.Follow with the manchego cheese.
6.Top each sandwich with two piquillo chilies, then add the remaining slices of bread, butter-side up.
7.Preheat a panini press or a grill pan over medium heat.
8.Place the sandwiches on the panini press or grill pan and cook until golden-brown and the cheese is melted, about 4-5 minutes.
9.Serve hot.
