Ingredients

3 lbs boneless beef chuck , cut into 1-1/2-2-inch cubes , patted dry

Instructions

1.Preheat the oven to 325°F.
2.Heat 2 tablespoons of oil in a large Dutch oven or casserole over medium-high heat.

4.Remove beef from the Dutch oven/casserole onto a plate, and set it aside.
5.Add the remaining tablespoon of oil, peppers, onions, garlic, paprika, cumin, saffron, and flour to the Dutch oven or casserole, and stir for a minute or two.
6.Add the chicken broth, dry red wine, and the can of crushed tomatoes, and stir well.
7.Bring the mixture to a boil and return the beef to the Dutch oven/casserole, add the drained chickpeas and stir.
8.Add water until everything is covered. Add the zest and juice of the orange.
9.Cover Dutch oven/casserole with its lid, and place in the preheated oven and cook for about 2 1/2 hours or until the beef is fork-tender.
